    From the supplier: The high price and shortage in supply of fresh vegetables, particularly lettuce, have contributed to the rising sales of ready-to-eat gourmet salad mixes in the retail market. According to a survey, refrigerated salad mixes emerged as one of the 10 new products that had the biggest sales in 1994. The increase in sales of value-added produce has also been attributed to the introduction of new formulations that feature light and fat-free dressings to attract the attention of health-conscious consumers.
